The Raw Food Recipe Everyone is Asking For

I created this recipe from a need for more almonds in my diet to increase my acetylcholine in my brain and to have a yummy new raw foods recipe for breakfast, lunch, or dinner.

That’s one thing I love about raw foods…

You tend to not feel like lunch must be eaten at lunch or dinner at dinner. I’ve even eaten salad for breakfast.

Living a raw foods lifestyle, you eat plenty of colorful, fresh foods, including nuts, seeds, and fruits, making sure most meals include lots of veggies.

This recipe is one of my new favorites for any time of day. It would even make a tasty dessert for a dinner party.

Another bonus to this recipe is that you are ingesting virus-fighting, memory-improving, and depression-eliminating ingredients!!

Here are the items you will need for this Fruit with Lemon Almond Crumble recipe:

~ 2 handfuls of raw almonds

Blueberries 300x200 The Raw Food Recipe Everyone is Asking For~ a pinch of sea salt

~ 1 banana, sliced

~ 1/2 – 3/4 cup of fresh or frozen blueberries

~ 1 tsp vanilla extract

~ 1 pinch of cinnamon

~ agave nectar (about 1 tbsp)

~ 1-2 drops of lemon essential oil

Drop almonds and salt into a food processor (or buy almond meal already ground from Trader Joe’s) and grind until they are a fairly fine powder.

LemonEssentialOil1 The Raw Food Recipe Everyone is Asking ForMeanwhile, slice fruit and put it into a small bowl. Top with vanilla and cinnamon. Stir to coat fruit.

Once the almonds are ground, add agave nectar slowly while the processor is on medium speed. You will have enough when the almond meal starts to stick to itself and become more like crumbles.

Add 1 drop of lemon essential oil while it’s still spinning the crumble.

Turn off and top immediately on the fruit.

Makes 1 serving (as a meal).

DELICIOUS!!

Variation: Use 1 organic apple cut into chunks as your fruit if you don’t like bananas or blueberries. Keep all other ingredients the same.

Be sure to stop by and let me know how much you like it!!

The Raw Food Recipe Everyone is Asking For

Recipe: Pot Roast

I have grown up eating and enjoying a recipe very similar to this one. However, I decided to simplify it and think it’s just as good. Hang on to your taste buds, because they aren’t going to know what hit them with this tasty, hearty meal ~ perfect for the fall and winter months.

There are some recipes that are exact, but then there are those, like this one, that I throw together as I go and taste test. I will give you approximate measurements, but frankly, I don’t know exactly ~ one of my favorite ways of cooking!! Nothing set in stone. All based on taste!

Ingredients:
Roasting piece of beef (size depends on how many you are feeding)
Drizzle of Olive Oil
Red Potatoes
Carrots
Sweet Yellow Onion
2 garlic cloves
Dried Thyme, to taste
Water
Sea Salt, to taste
Arrowroot powder

Brown beef in a pan drizzled with olive oil on medium heat. Add enough water to cover the entire piece of meat. Add minced garlic and sliced onion. Reduce heat to low and let simmer for hours (I prefer at least 4 hours). You want the meat to be in long enough that it falls apart easily and is tender.

About an hour before serving the dish, cube the red potatoes (I use about 1 or 1 1/2 potatoes per person) and slice the carrots (a handful per person). Add the veggies to the meat pot, unless there is not enough water to also cover the veggies. If that’s the case, I will steam the veggies in a separate pot and add them to the meat pot later.

Combine all ingredients and mix well. Remove about 1 1/2 cups of broth into a separate mixing bowl and thicken with arrowroot powder (making this gluten-free ~ otherwise you could use flour) by whisking it into the broth a little at a time. You may use 1 – 2 tbsps, depending on how thick you want the sauce. Pour the thickening broth back into the pot. The bubbling broth from the pot will thicken the sauce quickly. Stir as this happens to incorporate all of the broth together.

Flavor with sea salt and dried thyme (approximately 1 tbsp), serve, and enjoy!

Recipe: Banana Nut Cacao Smoothie

This Banana Nut Cacao Smoothie is one of my favorite breakfasts or afternoon snacks. It’s filling, healthy, and delicious. With the added flax and cacao, this smoothie is outrageously nutritious! I enjoy smoothies because they are so easy to make by just throwing all the ingredients into a blender and turning it on. Fast & delicious!

Ingredients:
1 banana
1 tbsp almond butter or cashew butter
1 tbsp coconut butter
1 1/2 – 2 cups coconut milk or water
1 tbsp flax meal
1 or 2 dashes of cinnamon
1 tbsp raw cacao nibs

Blend all ingredients on high in a blender for 2 minutes to make sure cacao nibs are ground up well. You could also put them in a coffee grinder first, then add the powder to the blender.

Raw cacao nibs are chocolate in its natural form. The nibs can be found at some local health food stores and also online on sites like www.vitacost.com.

The cacao nibs and flax add an enormous amount of vitamins and minerals to this smoothie. Cacao stacks up as one of the best superfoods on the planet, with plenty of minerals like magnesium, iron, etc., with every spoonful!

Recipe: Living Raw Chocolate Chip Cookies

This recipe makes one of the best afternoon snacks or even dessert. Because I only make two Living Chocolate Chip Cookies at a time and there are minimal ingredients, there is a lot of approximating on the quantities. For now, let’s start with the wonderful ingredients that make these raw chocolate chip cookies so delicious… and extremely healthy!

Ingredients:

2 handfuls of raw, organic cashews
1 good squeeze of honey or agave nectar, approximately 1 tbsp
1 tsp vanilla extract
1 pinch of sea salt
1 tbsp of raw cacao nibs

Pulse cashews in food processor until they are finely ground. Add the pinch of sea salt, drizzle of honey, and vanilla extract to the cashews and pulse until well mixed. Add raw cacao nibs and spin just for a second to mix, but not break apart the nibs.

Mix should stick together well when pinched between fingers. If necessary, add a bit more honey to make the mixture more sticky. Once it sticks together well, separate the mixture into two equal parts. Press one part into the shape of a cookie, Repeat with the remaining mixture.

Makes 2 large cookies or 3 small ones, if you prefer.

Enjoy!
