Easy Meal Ideas

If you have a schedule like mine, you TOTALLY understand how difficult it can be sometimes to eat healthy but make it quickly. For instance, yesterday I had to get my older two kids to school, come back, get my twins up and fed… we had a short time of play before their therapist arrived for an hour-long therapy session… which also pushed into lunchtime. In that amount of time, I would usually try to eat 3 small meals! However, normal meal (or snack) prep would not have worked in that situation.

The good news is I have found some wonderful, tasty and quick recipes that cut prep time by 3/4 typically and are delicious ~ and most you can take “on the go.”

Here are some easy meal ideas…

Banana Nut Smoothie (this is the way I make it, but you can use variations)

  • 1 banana
  • 1 large tbsp of almond butter (or peanut butter or sunbutter)
  • dash of cinnamon
  • 1 1/2 cup of almond or coconut milk (or whatever milk you typically drink)
  • 1 tbsp coconut butter (optional)
  • 1 tbsp of cacao nibs (optional, raises the nutritional value with LOADS of minerals)

Place all ingredients in a blender. Blend & enjoy in a tall glass!

Orange Chocolate Shakeology

  • 1 scoop Chocolate Shakeology*
  • 1 cup almond or coconut milk (or whatever milk you typically drink)
  • 1 splash (about 1/4 cup) of orange juice

Place all ingredients in a blender. Blend & enjoy!

Fruity Greenberry Shakeology

  • 1 scoop Greenberry Shakeology*
  • 1 cup orange juice
  • 1 cup fresh or frozen organic strawberries
  • 1 banana

Place all ingredients in a blender. Blend & enjoy!

Date Candies

  • 2 Medjool Dates, pittedĀ 
  • 1 splash of vanilla extract
  • 2 tsp coconut butter
  • 2 almonds (or nut of your choice)

Open the dates from one side and remove the pits. Hold open side of dates over the vanilla extract bottle, and quickly shake both upside down and back up to get just a bit of extract into the date (or you can use a spoon to drizzle the extract into dates). Add the coconut butter into the inside of dates through opening where pits were removed. Place an almond (or other nut) into the coconut butter. Pop in mouth and enjoy!
