Recipe: Gluten Free Potato Soup

Meals don’t get much better than this potato soup! It’s hearty, delicious, and has some of the best seasoning on the planet!! It’s also fairly quick to make, just for those nights you need to get dinner on the table FAST!

Ingredients:

5-6 russet potatoes, skin on
2 large garlic cloves, minced
1 small yellow onion, chopped
1 stick butter
1/2 cup coconut cream
1 cup coconut milk
3/4 cup parmesan cheese, grated
Sea salt, to taste
1 tbsp dried tarragon
Arrowroot powder for thickening sauce (quantity depends on desired thickness)

They are also a good source of vitamin B6, manganese, and vitamin C!

Chop the potatoes into bite-size pieces, and add them to a large pot, along with the onion. Cover with filtered water and boil until potatoes are soft.

Meanwhile, melt the butter in a sauce pan on low-medium heat. Once melted, whisk in the coconut cream and coconut milk. Simmer for a few minutes to heat through and somewhat thicken. Add minced garlic and parmesan cheese. Continue stirring to incorporate all of the cheese. Simmer for several more minutes to slightly cook the garlic, stirring occasionally.

Once potatoes are ready, drain most of the water, leaving only about an inch in the bottom of the pan. Salt the potatoes and the cream sauce. Add cream sauce to pot with potatoes and mix well.

To thicken the liquid into a more sauce-like consistency, scoop about a cup of liquid out of the pot, place it in a medium bowl, and add a few shakes of arrowroot powder to the liquid, while whisking out the clumps. The liquid will thicken as you add more arrowroot powder. Once it’s the consistency you like, whisk the mixture back into the potato soup. Stir well. The soup should thicken as you stir and let simmer a few minutes more.

Add the tarragon, serve, and enjoy!

Variation: Leave out the cheese and change the butter to coconut oil to make this meal both gluten free and dairy free!
