I love flatbread wraps because they are so versatile. You can stuff them with all sorts of goodies ~ veggies, meats, salads, etc. The other night I fed this to my son, and he told his sister, who missed the meal, “I had the best dinner tonight!” Life doesn’t get much better hearing your kid say that after you have fed them a plate full of veggies!!
4 Chebe flatbreads (follow directions on packaging for mixing… cooking instructions below)*
Drizzle of olive oil or coconut oil
2 portabello mushroom caps, sliced into strips
1 organic sweet (red or orange) bell pepper, sliced into strips
Organic Spring Mix Lettuces
A clean, natural ranch dressing, such as Bolthouse Farms or Marie’s
Asparagus or another green vegetable as side dish
Sea salt, to taste
Mix chebe according to packaging instructions. Once thoroughly mixed, divide into 4 balls of dough. Roll out each ball into approximately 6-8″ round flatbreads. Cook each flatbread in a medium-heat skillet, flipping after a few minutes on each side until bread is cooked. Set aside.
*Chebe is gluten-free. That’s why it was chosen for this recipe instead of regular flatbread or pita bread.
Chebe is an awesome gluten-free product! You can make rolls, breadsticks, flatbread, cinnamon rolls, pizza crust, etc., all with one all-purpose mix.
It’s also delicious with herbs like basil or oregano added to the dough for things like pizza crust!
Drizzle oil in skillet. Add bell peppers and saute for a few minutes. Add mushrooms and continue sauteing both the peppers and mushrooms until cooked through (unless you prefer your veggies more raw). Sprinkle with sea salt.
Meanwhile, steam your green vegetable side dish in a separate pan.
Once all veggies are cooked through to your liking, spread a thin layer of ranch dressing on chebe flatbread, add a layer of spring mix lettuce, add mushrooms and pappers, and top with sprouts.
Prep your side veggie with sea salt, roll up your wrap, and enjoy your dinner!
