Recipe: Homemade Chicken Soup

Some people have recently asked me for my Homemade Chicken Soup recipe… so here it is…

Ingredients:
-Meat from a roast chicken (I usually roast it and eat some from it the night before and the next day, make this soup)
-Large bag of frozen mixed gumbo-style or basic mixed veggies
-Pasta like penne (gluten-free, of course, if you have a sensitivity)
-Sliced mushrooms (an entire small container)
-Sea Salt, to taste
-Onion Powder, to taste
-Garlic Powder, to taste
-Tarragon or Basil, to taste

Place previously roasted (can also use a raw roasting chicken, which would cook longer in the pot of water) chicken in a large pot of filtered water. Make sure the water level covers the entire chicken. Let it simmer with a light rolling boil until the cooked meat easily falls off the bone. Remove entire chicken from water, being careful to get all the bones out. Place in separate pan for pulling meat off. While pulling meat off bones & placing back into broth, cook frozen veggies, mushrooms, and pasta in broth. Once meat is added back in, add sea salt, onion powder, garlic powder, and tarragon or basil to taste. Serve & enjoy!

(You can also make this with celery, carrots, onions, and garlic in the broth water while the chicken is cooking. If you do this, just be sure to cut the pieces of the vegetables down to bite-size the same time you pull the chicken meat off the bone.)
