This recipe makes one of the best afternoon snacks or even dessert. Because I only make two Living Chocolate Chip Cookies at a time and there are minimal ingredients, there is a lot of approximating on the quantities. For now, let’s start with the wonderful ingredients that make these raw chocolate chip cookies so delicious… and extremely healthy!
2 handfuls of raw, organic cashews
1 good squeeze of honey or agave nectar, approximately 1 tbsp
1 tsp vanilla extract
1 pinch of sea salt
1 tbsp of raw cacao nibs
Pulse cashews in food processor until they are finely ground. Add the pinch of sea salt, drizzle of honey, and vanilla extract to the cashews and pulse until well mixed. Add raw cacao nibs and spin just for a second to mix, but not break apart the nibs.
Mix should stick together well when pinched between fingers. If necessary, add a bit more honey to make the mixture more sticky. Once it sticks together well, separate the mixture into two equal parts. Press one part into the shape of a cookie, Repeat with the remaining mixture.
Makes 2 large cookies or 3 small ones, if you prefer.
