I developed this recipe a bit by accident based on what was in my house and what sounded good together. How can you go wrong with cinnamon and orange zest? Mix that with a yummy almond-based cookie and you get Orange Cinnamon Almond Cookies that your kids will go nuts over!
3 cups ground almonds (or almond meal or almond flour)
1 tsp baking soda
1 tsp salt
1/2 cup coconut oil, melted
1/2 cup agave nectar
1 tsp vanilla extract
zest from 1 orange
1 tsp cinnamon
1/4 cup almond milk
Preheat oven to 325 degrees. Mix all dry ingredients together in large bowl. Add liquid ingredients to dry & mix well. Batter will be thick.
Spoon a tbsp size of batter onto greased cookie sheet, making 12 balls of batter.
Bake for 15 minutes or until slightly browned on top. Cookies will be soft on the inside.
Store in the refrigerator. This will harden them a bit. However, they are great reheated in a toaster oven briefly (watch them so they don’t burn).
Makes 26-28 cookies.
Variation: add a handful of raw cacao nibs to the batter for a healthy “chocolate chip” type cookie!
