Recipe: Paleo Chili

I can eat chili any time of year! It’s delicious, filling, and can be stretched a long way in our 6-member family. Typical chili is loaded full of beans, so I wanted to create a paleo version. Here’s what I came up with…


1lb ground beef, ground turkey, or ground chicken
2 cups organic beef broth
1/4 head of cabbage, chopped
4-5 carrots, sliced
1 red bell pepper, chopped
1 small onion, chopped
10 button or portabella mushrooms, sliced
2 tomatoes, cubed
chili powder, to taste
cumin, to taste
sea salt, to taste

The antioxidants in cabbage are known to help protect against colon, breast, and prostate cancers.

It’s also helps reduce LDL (bad) cholesterol.

Cabbage provides more vitamin C than oranges, which helps the body develop resistance against infectious diseases and free radicals.

It also contains vitamin B1, vitamin, B5, vitamin B6, vitamin K, potassium, manganese, magnesium, and iron!

Cook ground meat in skillet until browned. Add bell peppers, carrots, and beef broth. Heat until veggies get softer. Add onions and mushrooms, continuing to stir occasionally until cooked through. Add salt, cumin, and chili powder to taste. Mix in cabbage and tomatoes and let simmer for another 20-30 minutes, until vegetables are at your preferred tenderness.

Serve and enjoy!

  1. Me and my family love chili, but Ihave never added the cabbage to it. I certainly will try that out to see how that tastes. I grew up with eating cabbage and forgot the benefits of it; thanks for informing us again!!

  2. Wow, I’ve never seen a recipe for chili this healthy. It’s great that you’ve printed out the benefits of cabbage… I didn’t know it provided all those benefits! Funny, though, I’ve always enjoyed adding cabbage to lots of different recipes! Thanks, Jessica!
