Recipe: Paleo Pot Roast

I usually make pot roast with beef, potatoes, and carrots. However, I wanted to come up with a delicious and satisfying paleo alternative version. So, here you go! Make it soon and let me know what you think. This is one recipe you can easily let cook most of the day, forget about it, and enjoy it once the vegetables are tender!

Ingredients:

1-2 lbs of beef for stew
1 cup organic beef broth
4 sweet potatoes
1 bag of frozen brussel sprouts
Enough water to cover meat & vegetables
1 bay leaf
1 tbsp of dried thyme
Sea salt, to taste
Arrowroot powder for thickening sauce (quantity depends on desired thickness)
A drizzle of olive or coconut oil for browning meat

Cut beef into bite-sized pieces. Heat oil on medium heat in a large skillet. Brown the meat on all sides. Transfer meat and juices to a large stew pot, adding enough water to cover about an inch above the meat. Add the cup of beef broth, the bay leaf, and the dried thyme. Let stew come to a rolling boil, then simmer for 4+ hours.

Cut sweet potatoes into bite-sized pieces. Add sweet potatoes, brussel sprouts, and any additional water needed to cover all of the veggies. Bring to a rolling boil again, then let simmer until the potatoes are soft and brussel sprouts almost flake apart. Add salt to taste.

To thicken the liquid into a more sauce-like consistency, scoop about a cup of liquid out of the pot (or more), place it in a medium bowl, and add a few shakes of arrowroot powder to the liquid, while whisking out the clumps. The liquid will thicken as you add more arrowroot powder. Once it’s the consistency you like, whisk the mixture back into the pot roast stew. Stir well. Let simmer 15-20 minutes more. If necessary, extract more liquid and repeat process, making the sauce even thicker, depending on your liking.

Once ready, remove bay leaf before serving into bowls.

This would also be good with a hint of cinnamon to go with the sweetness of the sweet potato chunks!
