Recipe: Paleo Spring Mix Roll-ups

I made these Paleo Spring Mix Roll-ups by chance the other day while I was actually craving roast beef. It works well with turkey or roast beef deli meat. It’s a wonderful, easy-peasy recipe to use as a party appetizer or even a fast lunch option. And it’s only 3 main ingredients!! No cooking. It doesn’t get much simpler!


Slices of “no nitrates or nitrites added” deli meat (such as the Hormel Natural Choice brand)
Paleo Ranch Dressing*
Organic spring mix of lettuce greens

Lay out a slice of meat on a plate. Spread a thin layer of ranch dressing across the top of the meat. Add a small handful of spring mix to the center of the meat, and roll it up. You can use a toothpick, if necessary, to hold the meat roll closed. Also, just flipping them seam-side down helps hold them fairly well.

Simple. Easy. Delicious!


*You can make this recipe just gluten-free and not paleo by finding simply a gluten-free ranch dressing.
