This makes a wonderfully healthy dessert or afternoon snack. Since it’s base is almond flour, it’s extremely good for you and your kids. I hope you enjoy this delicious Paleo Strawberry Shortcake!
2 cups almond meal or almond flour*
1 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
3 tbsp coconut oil or butter
1 tbsp honey or agave nectar
1 tsp vanilla extract
16 oz organic strawberries
2 tsp honey or agave nectar
Preheat oven to 350 degrees. Slice or chop strawberries as small as you’d like and place in a bowl. Add the 2 tsp of honey and mix well. Let the mixture stand while making the shortcake.
Mix almond meal, baking soda, sea salt, and cinnamon together. Cut in coconut oil / butter with a fork until there are small balls of mixture.
In separate bowl, mix eggs, honey, and vanilla well. Add to dry almond mixture. stir well until all wet and dry ingredients are combined.
Spoon onto lightly greased cookie sheet, leaving space between the 8 balls of dough. Bake for approximately 15 minutes, or until browned on top and a toothpick inserted into them comes out clean.
Once baked, slice each shortcake across from side-to-side, making a top and bottom. Add strawberries and honey that have been sitting on top of the bottom half of each shortcake and top them with each top, making a strawberry sandwich.
*Depending on whether or not you are using almond meal or flour, your cakes may look more bumpy or smooth. Either way, they are still delicious!
