Recipe: Stuffed Bell Peppers

This is a meal you probably have most of the ingredients for already in your house. I did. And I couldn’t believe how good it was! My kids loved it, too, even our twin 2-year olds. Eat the inside ingredients alone or in stuffed bell peppers.

Ingredients:

Red Bell Peppers (enough for 1 per person)
Mild Sausage (crumble kind, not links)
Brown Rice, cooked (use serving about based on bell pepper quantity, rice serving=half the amount of peppers)
1-2 cups peas, cooked (quantity based on your preference)
1-2 cloves of garlic
1 piece of gluten-free bread (more if making more than 2 peppers)
Sea salt, to taste
Drizzles of extra virgin olive oil

Preheat oven to 375 degrees. Saute sausage and minced garlic in a pan, breaking apart sausage as it cooks. Meanwhile, cut tops and seeds out of bell peppers. Place peppers in boiling water for 3-5 minutes to soften. Once sausage is browned, mix rice, peas, and salt in the pan with the sausage and garlic. Place softened pepper onto a swallow baking dish, cutting off the bottom of peppers, if necessary, so they sit flat.

Stuff each pepper with the sausage mixture to 1/2″ from the top of the pepper. Tear bread into small crumb pieces and place on top of stuffing mixture in the pepper. Drizzle with olive oil.

Bake in oven for 40-45 minutes until bread is golden brown and pepper is soft.

Transfer to plate & enjoy!
