The Raw Food Recipe Everyone is Asking For

I created this recipe from a need for more almonds in my diet to increase my acetylcholine in my brain and to have a yummy new raw foods recipe for breakfast, lunch, or dinner.

That’s one thing I love about raw foods…

You tend to not feel like lunch must be eaten at lunch or dinner at dinner. I’ve even eaten salad for breakfast.

Living a raw foods lifestyle, you eat plenty of colorful, fresh foods, including nuts, seeds, and fruits, making sure most meals include lots of veggies.

This recipe is one of my new favorites for any time of day. It would even make a tasty dessert for a dinner party.

Another bonus to this recipe is that you are ingesting virus-fighting, memory-improving, and depression-eliminating ingredients!!

Here are the items you will need for this Fruit with Lemon Almond Crumble recipe:

~ 2 handfuls of raw almonds

~ 1 banana, sliced

~ 1/2 – 3/4 cup of fresh or frozen blueberries

~ 1 tsp vanilla extract

~ 1 pinch of cinnamon

~ agave nectar (about 1 tbsp)

~ 1-2 drops of lemon essential oil

Drop almonds and salt into a food processor (or buy almond meal already ground from Trader Joe’s) and grind until they are a fairly fine powder.

LemonEssentialOil1 The Raw Food Recipe Everyone is Asking ForMeanwhile, slice fruit and put it into a small bowl. Top with vanilla and cinnamon. Stir to coat fruit.

Once the almonds are ground, add agave nectar slowly while the processor is on medium speed. You will have enough when the almond meal starts to stick to itself and become more like crumbles.

Add 1 drop of lemon essential oil while it’s still spinning the crumble.

Turn off and top immediately on the fruit.

Makes 1 serving (as a meal).

DELICIOUS!!

Variation: Use 1 organic apple cut into chunks as your fruit if you don’t like bananas or blueberries. Keep all other ingredients the same.

Blueberries 300x200 Change Your Life in One WeekFor 1 week to the day, I’ve been leading an awesome group challenge in everything from health in our bodies, minds, and relationships to finances and time management.

Our very first day of homework was to come up with 1 goal we wanted to accomplish by the end of the 30 days of April.

For me, my goal was that I wanted to be eating 80% raw foods by April 30th.

I decided I wanted to focus on getting back into raw foods more because I’ve eaten that way before and it’s the best I’ve ever felt!! I could focus, required less sleep, had brighter eyes and teeth, and much more. My system was happy. I was happy.

So, I started working on my goal the day I began the challenge because, after all, I am leading it and knew which step was coming first! (duh! Why not take advantage of the time?)

I am already eating about 70-80% raw most days and have noticed a difference in just a few, short, 7 days.

You may not think it’s much, however, if you’ve lived with my symptoms and then been freed of them, it’s a big deal!

Have you ever heard of brain fog? Maybe you haven’t, but I’m guessing you’ll know what it is when I describe it.

- It’s having a conversation with someone 5 minutes ago and you can’t quite remember what it was about.

- It’s knowing you know how to get somewhere, but it takes you 3 minutes to just sit in your car, waiting for the inspiration to come before you pull out of your driveway.

- It’s entering a room and not remembering why you went in there.

- It’s knowing you have something important to do today, you just don’t remember what it is.

- It’s feeling like you have to dust off the filing cabinets in your brain and start rummaging just to figure out how to make your mom’s famous lasagna recipe that you’ve cooked dozens of times and used to know how to make without the recipe.

- It’s phone numbers seemingly dropping out of your head.

- It’s not remembering the names of people you just met.

- It’s knowing your brain used to process faster and it feels like it’s chugging along just to keep up.

That’s the one that bothered me the most. The chugging. Knowing I have a fast-processing brain (most people close to me say my brain is working constantly!), and feeling like it’s working through sludge just to recall things I should know how to do in my sleep.

Brain fog is not fun. It’s scary, actually. Most people resolve that it’s because of age. I disagree. I believe it’s because of our diets and not taking care of our brains.

Between the information I’ve learned about the power of the foods we eat and the research I’ve done on brain health and neurotransmitters, I very much disagree.

If someone in their 20′s or even 30′s is experiencing the symptoms I listed above (or possibly even 60′s), there is no way that’s age related.

We need to stop looking at our symptoms like they are age-related or that they “just happen as you get older.”

After just one week of eating more fresh, raw, organic foods, my brain fog is lifting. I can tell my brain is processing at a much faster rate than it has in a LONG time. (Did you know that we can recognize if our brain speed has slowed down by just 7 milliseconds?) I can recall things faster. I can pick up projects where I left off and jump right back in instead of having to review half of the project first.

The other cool thing that’s happened is that I actually felt like taking the kids out the other day. Not just out, but to the store, to the playground, and even have a picnic.

When I would have to go out before, I would force myself to do it. Because I’m happy being at home, too, I thought it was just my personality making me push through an “I don’t wanna” attitude. So, we’d go out and do things, but I would have to force myself to load everyone in the van and even force a smile on my face.

Don’t assume your personality is altering your behavior! Check out anything odd and realize it’s a symptom of something greater.

Saturday, I took the kids out, and we had a blast. We ate a picnic at the playground and even stopped at the store for a special dessert treat! It was something I wanted to do, not something I felt forced into. And there is a big difference.

If you take nothing else away from this, take these 2 things:

1) Your life can be improved dramatically by simple, small positive actions over a few steady days

2) Don’t assume your symptoms are connected to your age – look deeper – what’s the foundation of what you are feeding and fueling your body with? Does it bring life?

I’m so thankful for this challenge group and us holding each other accountable to make positive changes in just a few short days. It really is incredible!

Finding Motivation with a Dream Board… and Nightmare Board

I recently sat through a webinar that, in one section, touched on how to motivate yourself. I get this question a lot actually, when it comes to fitness goals and just maintaining a healthy lifestyle.

I thought it was very interesting when the speaker suggested not just making a “Dream Board” but making a “Nightmare Board,” as well. She personally feels motivation MORE from the Nightmare Board than her Dream Board.

Pain can sometimes push us more than pleasure.

These are boards of rewards and living the dream life versus what would happen if you didn’t work, didn’t earn any money, and had nothing to show for your life or time on this planet. What would your life spiral into? That’s the “Nightmare Board.”

Well, thanks to Pinterest, my “boards” can be more easily put together than I thought.

Are you on pinterest yet? Have you gotten totally sucked into the pinning maddness?

I have to admit, when I first got an account on pinterest (which I avoided for months!), I stayed off of it as much as possible because I didn’t want to get sucked into the vortex of it taking over my time and life.

However, after sitting through a few webinars specifically about it and what all it can do, I think it’s a very, VERY cool concept. And I also learned strategic ways of using it, but not sitting on it for hours.

I can pin from pinterest directly or with my “pin it” button I’ve installed on my browser toolbar when I see a cool site.

How exciting… you get to see the very first picks for my Dream Board! Hawaii made my first 2 pins!!

In all of this, I’ve determined I’m going to be extremely selective. I don’t just pin everything. I pin what really speaks to me.

This should be interesting…

Resolutions Are For Wimps

Happy New Year!!

We all rang in the new year last night by either watching the ball drop, partying with friends, snuggling with our kids, hanging out at church, or praying, like I did.

It’s an exciting time. Each new year, we have the opportunity to be better, live better, work harder, and achieve more.

We have the chance to change the things we didn’t like about 2012 and move into greater things in 2013.

It’s a clean slate. A fresh start.

The beginning of something wonderful… if we let it.

How do we get to that something wonderful? By making resolutions, of course!

What is a resolution anyway? Dictionary.com has one definition as “a resolve or determination” – very good definition for how the new year starts off.

We are determined to change things, lose weight, get a better job, work harder, relax more – many, MANY resolutions are made for January.

However, why is it that we tend to lose our “determination” after just a month?

We put in some time, some effort, some abilities, but when we hit a snag, we tend to throw in the towel and say “Forget it! This year is just going to be like the last.”

Why do we do that? Because in our minds and hearts, deep down, we really haven’t set a firm foundation for determination, for resolve, for standing firm. We have somehow allowed a way of giving up in our minds even before we start.

New Year’s Resolutions are for wimps because most of us give up on them before we even start. Instead of making it about the new year, let’s make it about a better life.

Some ways you can do that are…

…by making life-long goals, not just those that last a month.

…by setting your goals with measurable, attainable milestones.

…working on a 6-month goal, and break down the steps into monthly “to-do’s.”

…determining in your heart, mind, and spirit that nothing is going to keep you away from reaching your goals. Review them often to encourage yourself to continue to step toward them.

Let’s stand firm this ENTIRE year, not just for a month. Become a resolute person. Be strong. Take charge of your life. Determine to make ALL of 2013 great!

Let’s put the true definition to our resolutions this year and make it our best year yet!!

One of the best ways to reach your goals is by sharing them with others. When you have someone else asking you how it’s going, you are more likely to make it happen! Share your 2013 goals in the comments – I’d love to hear!!

Health is a Choice

As soon as our eyes open in the morning, we are making choices – when to get out of bed, what to wear, which car to drive, which route to take to work, etc. We also have to choose whether or not to eat breakfast (you know… that most important meal of the day that many skip right over), what to eat, how much to eat, etc.

The same thing happens with exercise – what to do, how much to do, when to do it.

We all have plenty of choices in this life we live. Some seem less significant that others (and probably are) and some seem enormous and affect our very existance.

It’s very clear to me where most Americans place their health choices. They think that each choice of what they eat, when they eat it, how much they eat, if they exercise, when, where, how, etc., etc., etc., has nothing to do with the outcome of their physical abilities to be active, their mental alertness, their lack of symptoms, and so on.

People just don’t realize what’s normal anymore and why some choices they are making are causing not only them, but their kids, to suffer needlessly.

Let me tell you a story about me.

I’ve always had a really good memory and been able to figure most everything I put my mind to out. I have been able to self-teach myself computer language code, as well as many other things. However, several years ago, I got what I would call “brain fog” for lack of a better term. It was bizarre. I couldn’t think as clearly as I once did. I couldn’t remember things from just days prior. It was very unlike me.

However, it took me awhile to realize there was even an issue. The “fog” settled in so slowly that I hardly noticed it was there. I just kept living my life, knowing I was struggling a bit, but never stopping to figure out what the problem was.

We were gluten free and ate fairly healthy already… so I thought.

Then it happened.

Have you ever had a moment in time – an epiphany, an “ah ha” moment as Oprah called it – that you knew something would change your life drastically?

Mine was reading Alissa Cohen’s book Living on Live Food. What an eye opener! It made total, logical sense to me (I’m a very logical thinker), and I, literally, put it into practice the very next day.

The premise of the book is about eating living, raw foods, their benefits to the human body, and MANY raw recipes in the last half of the 1+ inch thick book.

I wrote my list. Went to the store. Bought my first round of foods for several raw meals. To be honest, some were great and some were amazingly awful. However, I stuck with it, tweaked, tried new, and came up with several meals we LOVED eating… including my kids.

Eventually, I ended up being about 97% raw.

Then one day it hit me – I was sleeping 6 hours a night and feeling GREAT. I had absolutely no more brain fog. I was remembering everything I needed to – could recall it in an instant. It was total mental clarity.

I was happy, healthy, and radiant. My teeth got whiter. My eyes got brighter. My complexion changed. It was amazing!

Looking back on it, I was so shocked that I hadn’t realized what trouble my body was having until I fixed it.

Just like when I started really exercising about 1 1/2 years ago… I didn’t realize I was getting so winded just walking up the stairs until I didn’t anymore. I remember the turning point being one day over at my sister’s house, playing in the backyard with my kids and nieces and nephews. I must have been running for 30 minutes straight – kicking balls, tossing balls, carrying kids, etc. Not once did I get winded or needed to stop. I felt like I could have kept going for hours! It was incredible.

What was even more interesting to me was that I didn’t realize I was in that bad of shape until I was in good shape. Weird how that works.

So, what does this have to do with you? Stop and evaluate your life, right now. Don’t wait until tomorrow. Do it today.

Do you have headaches a lot? Do you have stomach pain? Are you not remembering or thinking clearly, like you once did? Are you struggling to make it through the day because you are so tired? I ask these things because they all happened to me and it took me awhile to realize I needed to do something about it. And that those symptoms are just that – symptoms of a greater problem – either of a lack of nutrients, exercise, etc.

Don’t wait another day. Take action today. Health is a choice. It’s daily picking up the right foods to eat and choosing to move our bodies instead of sit.
